[Restaurant Recipe]: Casa Vega's Spinach Enchilada




I'm so grateful that Christy over at Casa Vega was willing to share some of her family's recipes with us! Turns out, they are pretty simple to make and beyond delicious! 

Spinach Enchiladas

Ingredients:
1 package of corn tortillas
12 oz fresh spinach
½ sliced white onion
1 tbsp chopped onion
8 large green tomatillos
2 cups of water
1 bushel of cilantro
1 tbsp cilantro
1 tsp granulated garlic
1 tsp of salt
½ avocado
1 oz sour cream
6 oz shredded cheese (Monterey Jack or Asadero)

As you know, I've been on a recent kick to shed this serious case of Blogger Butt that I've got goin' on and I was recently let in on one of the best kept secrets (until now) out there!

Panera Bread is now offering special “Hidden Menu” breakfast and lunch options that customers can request in the bakery-cafes. These healthier eating options are here just in time for summer beach season AND for the Foodies Shedding Booties Challenge! 

Panera Bread bakery-cafes nationwide are offering a new lineup of “power foods” with lean proteins, complex carbohydrates and veggies as part of its all-new Hidden Menu. The items won’t be promoted in-store, but MyPanera members and fans/followers on Panera’s social media channels will get the inside scoop... Oh, and well... obviously you too!

Listen up guys! I have this new idea that I'm pretty psyched about!

You see, a few months ago, I was at the doctor's for my regular check up and for the first time in a long time, I had to get on the scale. [womp womp]
I quickly realized that all the hard work I had put in last year to fit into my wedding dress had quickly gone down the drain. With all the recipe testing and sampling and restaurant reviews I've been doing, I soon found myself with a serious case of Blogger Butt!

Anyway, I have decided that enough is enough! It's time to whip that butt into shape and I want you to join me!

Burgers That Won't Ruin Your Buns! Plus A Giveaway!

The Fourth of July is rapidly approaching and with it usually comes lavish cookouts with burgers, hot dogs, ice cold beer, you know... all the good stuff! Well here are a few ways to enjoy the holiday and not worry about ruining your bikini-bod efforts! Plus a giveaway at the bottom of the post!


Tip #1 - Swap Your Bread
It's no secret that carbs are evil... that's why they taste so good! Make one simple swap and save at least 150 calories! Try something like the sandwich thins or flatbreads that you can find in the deli section!


Tip #2 - Swap Your Meat
Well this is probably a no-brainer but swapping out that all-beef patty for ground turkey or ground chicken can hold off almost 100 calories and 8 grams of fat! In my opinion there’s way more you can do with turkey burgers … caprese burger, Hawaiian burger, Greek burger, or Southwest burgers, just to name a few!



Tip #3 - Forget Meat All Together
I know, I know. That thought to some people is sacrilege but hear me out. I recently tried these new Mediterranean chickpea burgers from Morningstar Farms. Am I a vegetarian? No, my husband would probably divorce me if I were, but these were pretty amazing. I was shocked how much flavor was packed into one little patty! These have a whopping 70% less fat than a regular beef burger and only 110 calories per patty. Put that with your flatbread and you’ve got yourself some satisfaction! Tip #4 - Upgrade Your Condiments
I was shocked when I actually started reading what’s in condiments. Half of the stuff I can’t even pronounce! Even knowing the facts, I do still find it hard to stand clear of the Heinz but I’ve recently become addicted to the cool, smooth flavors of tzatziki sauce! If you’re not familiar with it, it’s a traditional Greek sauce that is made of yogurt, cucumber and garlic. Here’s how I make my own, it’s super quick and easy.
1 cup of non-fat plain yogurt
½ cup of chopped seedless cucumber
1 clove of garlic
salt and pepper
fresh dill, to taste
light squeeze of lemon juice
Combine all the ingredients in a bowl, keep chilled until you’re ready to serve!

Orange Chicken and Coconut Rice Recipe



Do you ever have those cravings that you just can't shake? The other night I had a hankering for Chinese Orange Chicken. You know, that thick battered, super sweet, clog your artery kind of dish?
Yup, that's what I was craving but then I thought of all the beach-bods here in Southern California and how they surely wouldn't be caught dead shoveling that sort of dish in their mouths came to mind. Healthy Coconut Shrimp





Last night, as I got home to whip up the yummy Baked Coconut Shrimp recipe my girl Cynthia from Cupcake Provocateur sent over I realized two things... 1) I was missing quite a few ingredients and 2) I was way too tired to go through each step and follow the recipe. No surprise there... by now you all should know I'm not the biggest fan of recipes, yet I love sharing my successful concoctions with you!
