Cinnamon Cupcake Monsters!




Only a few weeks away from every "Boos and Ghouls" favorite holiday! Why not whip up some simple cinnamon cupcakes and top it off with these adorable gummy eyes from Treat Street!

See below for decorating tips and how to build in a spooky surprise! 




Ingredients
1 box white cake mix
1 c water
1/4 c oil
3 eggs
2 tsp cinnamon

For Frosting
1 cup (2 sticks) unsalted butter, softened
6 to 8 cups confectioners' sugar
1/2 cup milk
2 teaspoons vanilla extract

food coloring of choice

Preparation
Prepare cake mix according to the directions on the box. Pour batter into lined cupcake trays and bake. 
Remove from oven and allow to cool completely. 

Prepare frosting by placing the butter in a large mixing bowl. 
Add 4 cups of the sugar and then the milk and vanilla. 
On the medium speed of an electric mixer, beat until smooth and creamy, about 3 to 5 minutes. 
Gradually add the remaining sugar, 1 cup at a time, beating well after each addition (about 2 minutes), until the icing is thick enough to be of good spreading consistency. 

You may not need to add all of the sugar. Add in your favorite food coloring to make the perfect monster base!


Decorating Tips:

- Use Treat Street Gummy Eyes to create fun monster faces!

- Combine a bit of food coloring with shredded coconut for crazy cupcake hair!

- Scoop out a bit of the cupcake before frosting the top. Fill with strawberry or raspberry jam and then frost the top. When you cut into it you'll have a spooky surprise!
