Summertime is finally upon us and with that comes a multitude of backyard barbecues, poolside parties and picnics at the park. Sure you old standards are burgers on the grill and maybe a few tuna fish sandwiches by why not pull a "Sausage Switcheroo" this summer! I teamed up with Farmer John to create a fresh and innovative recipe using their Hot Louisiana Brand Chicken Smoked Sausage in a tasty new way.
One of my favorite flavors recently has been that tangy taste of a hot wing, however when you're basking in the sun dawning that adorable new bikini, a chicken wing hanging out of your mouth is not the cutest accessory. I decided to take those flavors to create a Buffalo Chicken Sausage Pasta Salad. It's all the flavors of hot wings that you love, that tangy hot sauce, bleu cheese, cool carrots and crisp celery all tossed in a fresh Greek yogurt ranch dressing. See, I'm still keeping that bikini in mind!
Ingredients:
1 package of Farmer John Hot Louisiana Brand Chicken Smoked Sausage
1/4 cup wing sauce
1 box of your favorite shaped pasta
2 cups of shredded carrots
2 cups of celery, thinly sliced
1/4 green onion, chopped
1 cup of bleu cheese
For Greek Ranch Dressing:
1 cup Greek yogurt
2 tbsp milk
1 tbsp garlic powder
1 tbsp onion powder
2 tsp dill
1 tsp sugar or light agave
salt and pepper to taste
Preparation:
Start by cooking your pasta and allowing it to cool in a large bowl inside of the refridgerator for at least 20 minutes. While you're waiting for it to cool down, get started on the other steps.
Cut Farmer John Hot Louisiana Brand Chicken Smoked Sausage into thin slices. Sautee in a pan until they get a gorgeous golden sear on them and start to get a tad bit crisp. Add in the wing sauce and let simmer on a few low heat for about 5 minutes.
In a mixing bowl or mason jar, combine Greek yogurt, garlic powder, onion powder, dill, sugar, milk, salt and pepper. Whisk the ingredients together until completely blended. If you're using a mason jar, give it a few vigorous shakes. Use a bit more milk to get to the desired consistency.
Once your pasta is cool, mix in the Chicken Smoked Sausage with all the sauce it was cooked in. This will give the whole salad that tangy spice! Now add in the shredded carrots, celery, green onion and blue cheese. Give it all a good mix so everything is evenly distributed. Be sure to serve this dish chilled with the Greek ranch dressing on the side so it can be drizzled on the top of the salad just like you would if you had the wings!
