1 lb ground linguica
1/2 onion, chopped
Hawaiian Sweet Bread (1 round loaf)
Ritz Crackers, 1 sleeve
Fontina Cheese
Crushed Red Peppers, wet, to taste
4 large portobello mushroom caps or 12 small mushroom caps
Fresh Kale
Olive Oil
Garlic
Adobo Seasonings (Goya makes a great one... red cap!)
Water
Preparation
Preheat oven to 400 F.
Prepare the kale garnish first by tossing the leafy greens with olive oil, crushed garlic, and adobo seasoning. Spread the greens out evenly on a large baking dish and bake for 10-15 minutes, or until crispy. Remove from oven and set aside.
To make the stuffing, crumble bread and crackers into a large mixing bowl. Slowly add in water to moisten. Add in chopped onions and ground linguica and mix it all up with your hands breaking down pieces of bread and crackers as you go. Mix in seasonings and crushed red peppers to taste. Be prepared, the peppers will add HEAT!
Brush olive oil on both sides of mushrooms. Lay on a baking sheet face up and fill with a heaping amount of the stuffing mixture. Bake for 10-15 minutes.
Remove from oven and add a slice of cheese to each cap and bake for an additional 5 minutes or until browned.
Remove from oven, plate mushroom and top with crispy kale before serving.
