Chicken & Dumpling Soup - Ultimate Comfort Food


One of my absolute favorite comfort foods is Chicken and Dumpling Soup. There's just something about it that soothes the soul! What's great about this recipe is that there's a good chance you already have most of the ingredients in your kitchen! You can even cheat and use leftover rotisserie chicken!
Here's what I do to whip up the perfect pot!


Ingredients:
2 Chicken Breasts, cubed
Carrots, sliced
Celery, chopped
Onion, chopped
Garlic, chopped
Olive Oil
Chicken Broth 
Bisquick Baking Mix
Milk
Salt and Pepper



Preparation:
In a stock pot, saute onions, garlic, carrots and celery with salt and pepper until softened. 

Add in cubed chicken and brown the edges. Add in 1 can of chicken broth, 3 cups of water and a bit more seasonings. Get creative! My favorite is Goya Adobo seasonings, it adds amazing flavor to everything. 

Let simmer for about 10 minutes while your prepare your dumpling mixture. 

Combine 1 cup of Bisquick with 1/3 cup of milk and stir until you get a thick paste, add a bit more milk if needed. Drop spoonfuls of the mixture into the simmering soup. Cook uncovered for 10 minutes and then covered for an additional ten minutes. 

Let cool a bit and serve up heaving spoonfuls into shallow bowls. 

Trust me, you'll be making more dumplings for your leftovers ;-)
