How I Met Your Mother Farewell Dinner: MacLaren's Pot Roast


The time has come for us to say farewell to Ted, Barney, Robin, Lillypad and Mashmallow. We've gone through weddings, births, deaths, break-ups, and plenty of other legen...wait for it... dary moments with this crew but tonight we watch and find out exactly how Ted met the mother of his two (bored out of their minds by now) children.

In celebration... and mourning... of the end of one of my favorite shows, here is a recipe in its honor. 


MacLaren's Pot Roast

Ingredients
1 3-5lb Pot Roast
4 Red Bliss Potatoes
1/2 Onion
6 cloves of garlic
Baby Carrots (about 2 handfuls)
Beef Stock
Bottle of Beer
Gravy Master
Salt & Pepper 
Slow Cooker

TV Dinner: Pretty Little Linguini with Spicy Shrimp



Is anyone else still biting their nails from the Summer finale of PLL?! Dying to know how Spencer, Aria, Emily and Hannah will get attacked by the A Team next! Still screaming at the TV after seeing Toby's face under that black hoodie?! Well tonight we are back with a new season of what I'm sure will be filled with plenty of "WTF" moments.

Caramel Apple Pie - "Once Upon A Pie"


One of my favorite shows, Once Upon A Time, is back on the air tonight! Last season we were left in suspense with everyone starting to remember their fairytale past. Here's my recipe for "Once Upon A Pie", one slice and I'm sure it's something you will never forget! 

What You Need:
4-6 HoneyCrisp (or other sweet) Apples
1 tbsp Cinnamon
1/2 c Brown Sugar
1/2 c White Sugar
1/4 c Flour
Roll-out Pie crust
Caramel Sauce

For Crumb Topping:
1 1/2 c Flour
2 sticks of butter
1 c Brown Sugar
Cinnamon

What You Do:

*Preheat oven to 350*

1. Cut up your apples into large cubes and place in a large mixing bowl
2. Add flour and sugars and a few shakes of cinnamon to the apples and toss
3. Roll out your bottom pie crust into a pie pan.
4. Spread a thin layer of caramel sauce onto the crust.
5. Fill with the apple mixture. It's OK to let it pile up! 
6. In the same bowl you used for the apples (I hate doing extra dishes) melt down your sticks of butter in the microwave. 
7. Add flour and brown sugar and mix with your hands. Be careful, the butter may be hot. 
*If you notice the mixture is too wet and not forming a "crumb", add more of the dry ingredients. 
8. Pack the crumb mixture on top of the apples in a thin layer. 
9. Bake for 35-40 minutes until golden brown. 

Let cool before serving! Drizzle with a little caramel sauce or top with vanilla ice cream for a little extra magic!

TV Dinner: Rachel Berry FroYo - Fake It 'til You Make It

This "TV Dinner" is sweet and tart, just like our favorite Gleek, Rachel Berry!
Do you think she'll survive in the Big Apple? Is Brody going to make her forget about Finn? Whip this up, grab a spoon and get your Glee on!

What You Need
2c Frozen Mixed Berries
1c Vanilla Greek Yogurt
1 tsp of vanilla extract
Honey (or sugar) to taste

What You Do
Throw all ingredients in a blender, puree and serve! Pop it in the freezer if you want it a little thicker.

See that's super easy. I'll leave all the dramatics to Rachel and Kurt!

TV Dinner: Mambo Chicken Mozambique

With all of the great television that's back on I can't help but get inspired! I've been doing a new feature called "TV Dinner" on Kasey's Kitchen and thought I would share tonight's menu with you guys FIRST here on The Dish!

In the "Must See" Spot tonight is Dancing With The Stars: All Stars. Who will be the first All Star to get the boot? Grab your super spicy "Mambo Chicken Mozambique" and pop yourself in front of the tube to find out!

What You Need:
4 Boneless Chicken Breasts, cut into strips
4 garlic cloves, coarsely chopped
1 onion, chopped
2 cups white wine
1 stick of butter
1 packet of Goya Sazon seasoning
2 tbsp crushed red peppers (not dried)
White Rice

What You Do:


Sautee onions and garlic in butter until translucent.

Add in chicken strips and allow to brown

Stir in in Sazon and crushed red peppers. Allow to cook for about 2 minutes. 
*Add more of the crushed red peppers if you want to bring the heat!

Add in white wine, cover and cook on low for 10-15 minutes. You want to have a good amount of liquid in the pot!

Prepare rice according to the box/bag. 

Spoon chicken and sauce over rice and serve with a good crusty bread for dipping! 

So good, you'll be shakin' your money maker all over the kitchen while you do those dishes.
