Snow Angel Cupcakes







Ingredients

1 box of Angel Food Cake Mix
1 1/4 c water

For Frosting:
2 sticks (1cup) of butter, softened
6 cups of confectioners sugar
1/2 cup of whole milk
2 tsp vanilla extract
2 cups of shredded coconut, sweetened 


Preparation

Preheat oven to 375. 

In a large mixing bowl, beat cake mix and water with electric mixer for 30 seconds on a low speed. Kick things up and beat the mix on a medium speed for 1 more minute. 

Pour batter into lined cupcake trays, filling about 3/4 of the way.

Bake for 15-20 minutes, or until the tops of the cupcakes are golden brown and cracks form on top. Remove from baking tray and let cool on a rack. 

While the cupcakes are cooling, it's time to whip up the frosting. 

Place butter in a large mixing bowl. Add 4 cups of sugar, then milk and vanilla. Beat on a medium speed until smooth and creamy, about 3-5 minutes. Gradually add in the remaining sugar. 

Spread a thick layer of frosting on cooled cupcakes. Cover frosting with shredded coconut and top with Treat Street Holiday Treat Topper.

Recipe for Caramel Apple Georgetown Cupcakes!



A few weeks ago I had the chance to meet with the owners of Georgetown Cupcake, Katherine Kallinis Berman and Sophie Kallinis LaMontagne. You may know them from their hit show on TLC, DC Cupcakes, and I have to say, these two are as sweet as their cupcakes! They invited me into their Robertson Boulevard location to get the scoop on what makes their cupcakes stand miles above the rest (in my opinion at least), a sneak peek at their latest fall flavors, and learn how to master that signature swirl !
